1 oz. Serving

A 1 oz. serving of SoySation shreds is approximately 1/4 cup.
 

Allergen contamination

We use several different procedures to help us control and prevent the cross contamination of allergens (almonds and soy). All of our procedures have been approved by the US Military and the Federal Department of Agriculture inspection processes.
 

Almonds

We crush raw organic almonds and add filtered water to make the 'almond base' that is used in THE ORIGINAL Almond Cheeze.  The small pieces of the brown almond skin that remain in each of the Styles (flavors) are most noticeable in the Cheddar and Mozzarella Styles. The raw, certified organic almonds we currently purchase from California are not irradiated.
 

Calcium

There are 235.62 mg of calcium in a 1 oz. serving of Lisanatti® cheese alternatives. The calcium in our products comes primarily from the casein. There is a small amount contributed from the calcium phosphate which is mined from the earth and helps emulsify our products.

Canola Oil

There have been many studies on canola oil, and we have not found one that indicates canola oil can cause cancer when used in standard cooking and processing methods. The temperature at which we process our cheese alternatives is approximately 175 - 185 degrees Fahrenheit. Some researchers have shown that heating canola oil, and other oils, to temperatures of 600 - 700 degrees Fahrenheit causes oils to develop carcinogens, much the way char-broiled foods over-cooked on a barbecue can.

 

Carrageenan

The un-degraded carrageenan we use is not from the Irish Moss family of seaweeds.
 

Casein

Casein is the protein derived from non-fat dairy milk. It allows our cheese alternatives to duplicate the texture and melting performance of dairy cheese. Vegetarians (lacto-ovo) usually include casein in their diets; however, most vegans generally do not. Due to our proprietary formulas, we cannot disclose the exact amount of casein per serving.

 

Cheddar Taste

When it comes to cheese, many American taste buds have grown accustomed to the rich and creamy flavors and textures produced by dairy fats and sodium. (The fat content in dairy cheddar is often 50% or more on a dry basis.) Because we do not use dairy fats or dairy cream, our Cheddar and American Style cheese alternatives are mild when compared to the same flavors of traditional dairy cheese.

 

Chemicals

There are no chemicals used to make Lisanatti® cheese alternatives.
 

Cholesterol

There is no cholesterol in any Lisanatti® cheese alternatives.
 

Citric Acid

There is citric acid in Lisanatti® cheese alternatives.
 

Citrus

There is no citrus in any Lisanatti® cheese alternatives.
 

Cooking Temperature

Lisanatti® cheese alternatives are processed at temperatures between 175 - 185 degrees Fahrenheit, cooled, and then cut or shredded, and packaged.

 

Corn

There are no corn or corn by-products in Lisanatti® cheese alternatives.
 

Cultured Flavorings

The cultured flavorings we use are a highly proprietary component of our products. They are in line with our choice of other high quality ingredients selected to produce the finest cheese alternatives available on the market. They are developed through a live culture process similar to manufacturing of cottage cheese.

 

Dyes

There are no dyes used in any Lisanatti® cheese alternatives.
 

Flavonoids

Only the naturally occurring isoflavones (proteins) in the soybeans are in Lisanatti® SoySation chunks, slices, or shreds.

 

Freezing

Lisanatti® products freeze well. The packaging film we use is not intended for freezer storage, so we recommend putting any Lisanatti® cheese alternatives you choose to freeze in an airtight container to prevent the low temperature from causing the seals to loosen or separate.

 

Gluten

There is no gluten in any Lisanatti® cheese alternatives.
 

Herbs

THE ORIGINAL Almond Cheeze - Garlic & Herb Style contains onion, basil, oregano, and of course. . . garlic.

 

Hydrogenated Oils

There are no hydrogenated oils in any Lisanatti® cheese alternatives.
 

Iodate / Iodine

There is no iodate or iodine in our products. The natural salt we use is obtained through evaporation.
 

Isoflavones

The isoflavones in our products are a component of the soy protein. The soy proteins in a 1 oz. serving of SoySation are less than the 6 grams as suggested by the Federal Consumption Index. Because our formulation is proprietary, we do not provide this specific information.

 

Kosher

Lisanatti® cheese alternatives do not carry a Kosher symbol at this time.
 

Lactose

There is not lactose in any Lisanatti® cheese alternatives, as confirmed by Independent lab tests.

 

Magnesium

Independent lab tests of our products report approximately 65 milligrams of magnesium per 100 grams of product. (Apx. 19 grams per 1 oz. serving)

 

MSG

There is no MSG or MSG-related products in any Lisanatti® cheese alternatives.
 

Mustard

There is no mustard in any Lisanatti® cheese alternatives.
 

Natural Flavorings

This ingredient is a dairy derivative and product details are proprietary.
 

Oats

There are no oats in any of our products.
 

Opened

Unopened, all Lisanatti® chunks have a shelf life of 12 months from date of pack. MUNCHEEZE Snack Sticks and SoySation Shreds & Slices have a shelf life of 9 months from date of pack. Use clean utensils and wash your hands before handling any food products. Keep Lisanatti® cheese alternatives like a traditional dairy cheese, tightly wrapped or in an airtight container, and use within about 5 - 7 days after opening. If you find small spots of mold developing, they can usually be trimmed and discarded. Please use your own best judgment if this occurs.

 

Organic

We use as many organic ingredients as are affordably available on the commercial market. Because our products currently fall into the less-than-70% category for labeling, we are only able to list the organic items in our ingredients schedule and not on the front of the labels.

 

Pasteurized

After our cooking process at 175 - 185 degrees Fahrenheit our products are considered pasteurized.

 

Peppers

Our USA-sourced peppers are safe from salmonella. They arrive dehydrated and are then processed at 175 - 185 degrees Fahrenheit.

 

Petro-chemicals or derivatives

There are no petro-chemicals used to make Lisanatti® cheese alternatives.
 

Phosphates

The combined content of the calcium phosphate and sodium phosphate used in Lisanatti® products is less than 2%. The calcium phosphate is mined from the earth and helps emulsify our products.

 

Phosphorous

In a 1 oz. serving there are 149 mg in THE ORIGINAL Almond Cheeze, 137 mg in RiceCheeze, and 146 gm in SoySation.

 

Potassium

In a 1 oz. serving there are 6.5 mg in THE ORIGINAL Almond Cheeze, 11.6 mg in RiceCheeze, and 6.3 gm in SoySation.

 

Preservatives

All Lisanatti® Chunks, Slices, and Sticks are preservative-free. Due to the large surface area of our Shreds, they contain FDA-approved sorbic acid to deter them from spoiling.

 

Raw

Our cheese alternatives are not considered 'raw' foods.
 

Recipes

Lisanatti® cheese alternatives are an easy, direct substitute for dairy cheese. Most recipes will be comparable in texture & performance, and healthier, when made with The Good Health Cheese Alternative®. Occasionally, depending on the recipe, there may need to be a little more liquid added because of the lower fat content of our products.

 

Salt

We use sea salt or Kosher fine salt, both non-iodized The sea salt we use is fully unprocessed. We do not add any iodine or iodates to it.

 

Settling

During packaging, we add a potato starch anti-cake to allow our SoySation shreds to shake out loosely and easily. Sometimes, due to shipping and handling, the shreds may settle at the bottom of the bag. Gently shaking the unopened package should allow them to separate.

 

Shelf Life

All Lisanatti® Chunks have a 12-month shelf life. The Shreds, Slices, and Sticks have a 9-month shelf life. We've spent more than 30 years improving our products using state-of-the-art processing. Our unique and proprietary production methods are what contribute to the long shelf life for The Good Health Cheese Alternative®.

 

Sorbic Acid

Due to the large surface area of our Shreds, they contain FDA-approved sorbic acid to deter them from spoiling.

 

Starch

Corn and potato starches are used in our SoySation Slices. Our shredded products are packaged with a potato starch anti-cake that keeps them from "clumping together" in the package.

 

Trans fats

There are no Trans fats in any Lisanatti® cheese alternatives.
 

Vegan

We presently have no vegan products. The numerous non-dairy proteins we've tested do not have the same molecular structure as casein (dairy protein) and, therefore, don't duplicate the quality and melting performance people expect in Lisanatti® products. Comments from our customer service calls tell us that people don't want another 'me too' product that doesn't taste and melt great. We continue to research and test so we can produce a vegan cheese alternative that meets the same high quality standards as our other Lisanatti® products.

 

Vitamin A

A 1 oz. serving of any Lisanatti® cheese alternative contains less than 2% based on a 2,000 calorie diet.

 

Vitamin C

A 1 oz. serving of any Lisanatti® cheese alternative contains less than 2% based on a 2,000 calorie diet.

 

Vitamin K

There is no Vitamin K in any Lisanatti® products.
 

Wheat

There is no wheat in any Lisanatti® cheese alternatives.
 

Yeast

Yeast and yeast by-products (flavor enhancers) are not part of our formulation.
